What’s on my Mind:
I wish terribly that I was at the beach right now instead of sitting at my desk, in an office without air conditioning. They say ‘they’re working on it’…. sigh. So, I’m just thinking about how this week I’m going to work my butt off at the gym, lay outside and get some color (whether it’s my backyard or the beach) and try to pretend I don’t have a full-time job and I’m still in college/have summers off. Plus, right now I’m working on a brochure for our upcoming retreat in Aruba, so I’m just admiring the pictures and counting down the days…
What’s on my Plate:
The most amazing salad ever. I have become obsessed with mixed greens and ‘fruity’ salads… like the type that have sweet dressings, or strawberries or dried cranberries and walnuts on them! This one is a mixed baby and frisee greens with chicken cutlet, tomatos, red peppers, goat cheese, pecans, dried cherry craisins and the best dressing in the world: Poppyseed! Although sometimes I buy lunch at work, I would much rather just get the ingredients at home and be able to customize it to exactly what I’m in the mood for. On the side I had a Honest Tea and an apple with peanut butter 🙂 I’m waiting for some stores to re-stock PB2 so I can give that a try… has anyone used PB2?
Preparing for my vacation, ahhh! I leave in about a week from today, the evening of July 3rd for my European cruise adventure! I’m flying from NY (where I live) to Barcelona and staying there for a few days to sight see, check out the beach and go clubbing! Then we board the cruise in Barcelona, and head down the Italian coast, stopping at Florence, Naples, Rome & Pisa (not in that order), finishing up in Cannes, France and finally swinging back to Barcelona. I’m soooo excited, however I feel like I’ll need a vacation from my vacation after, AND I can’t post for 10 days!
I hope you all won’t miss me too much, but will still check out my previous blog posts! I promise I have quite a few boxes shipping in, so once I return, I’ll be on a posting spree for the rest of July! 🙂

I personally like Betty Lou’s powdered PB. It’s nice bc it’s less fatty than regular PB and it mixes easily into my smoothies or shakes.
Check out Whole Foods or Wild by Nature. I believe they have both brands in stock.
